If you’re one of our regular readers, you already know the story of our journey toward a gluten-free lifestyle. I’ve been eating gluten-free since 2009 with the exception of a few months after being without gluten for almost 2 years in the beginning, and one other ‘cheat’ with quesadillas one night five years ago. Both of those times, gluten proved to me that it doesn’t like me at all, so leaving it behind for good at that point wasn’t a problem.
Most of you already know about the great health benefits of going gluten-free. Lucky for us, it seems that every day a new gluten-free product shows up on the shelves of our grocery stores. Many times the gluten-free options are not particularly healthy either, so If I can find a grab and go snack or quick breakfast that is not only gluten-free but also healthy, it’s a double bonus.
Garden Lites – Veggies Made Great
Imagine my surprise when I found these delicious Garden Lites Veggies Made Great snacks in the freezer section of our grocery store. The package reads, “Veggies: Our #1 Ingredient.” That sold me. My family loves anything that includes gluten-free flours and veggies. The Garden Lite muffins remind me of the snacks I used to make for my (then little) girls which included hidden veggies from recipes from The Sneaky Chef: Simple Strategies for Hiding Healthy Foods in Kids’ Favorite Meals.
No Baking! Grab and Go Muffins
Some of you also know that cooking is not my #1 favorite activity. I’d rather be outside growing the vegetables, rather than inside adding them to my baked goods, so I love anything that we can grab and eat – – especially on those busy mornings when we have to rush out of the house.
Double Chocolate Muffins
The Garden Lites Double Chocolate Muffins are made with zucchini and carrots and are our absolute favorites. We eat these with breakfast and as snacks. They are also soy-free, peanut-free and tree-nut free.
Blueberry Oat Muffins
The Garden Lite Blueberry Oat Muffins are made with zucchini and certified gluten-free rolled oats. These are a delicious mid-morning snack, especially with a cup of Earl Grey tea.
Veggie Cakes
Garden Lites offers two kinds of veggie cakes: Superfood Veggie Cakes Superblend and Superfood Veggie Cakes Kale and Quinoa. Both of these can be popped in the oven or microwave for a quick breakfast that is healthy and yummy.
They remind me of the egg cups that I sometimes make in my muffin pans: you know the kind that you mix veggies and/or cheese into? I have good intentions on preparing these quick and easy breakfasts in bulk, but well, sometimes I don’t meal plan like I plan to!
Sometimes it’s easier to grab a box of these and be done with it.
They also have Fritattas, in case you don’t want the egg yolk. The Veggie Bacon and Potato Fritatta is super yummy!
Bakes
My big girl really likes these for breakfasts. She’s not a big fan of eggs alone, but she will eat them if baked into a dish. Her favorite bakes are the Broccoli Cheddar Bake and the Spinach Bake.
Waffles
My youngest loves waffles. She also loves veggies of any kind. Bonus that the Garden Lites waffles also contain veggies. They have plain Homestyle waffles and Blueberry (her favorite.) I like these, too.
Veggie Bites
These are smaller versions of the Veggie Cakes, in other varieties. Our favorites are the Kale and Brown Rice and the Broccoli and Brown Rice.

I have tried the muffins and veggie bites. They are great! Need to try the waffles next!
I’ve never heard of this brand! Going to have to do more research on them. Fortunately, my kiddos love veggies, so hiding is not a worry. However, I would love to add more healthy bites to my snacking regimen.
These look yummy!! Oftentimes hiding veggies are important for kiddos. I’ll have to look for these items at my grocery store.

Great post! We’ve actually tried these waffles and they are pretty good. I think I need to try the muffins – anything that makes breakfast faster is good for me!

This is awesome. Like you sometimes you just want to buy it and be done with it. If they taste good! I always had to make everything from scratch for my kids. In our fast-paced world, it is nice to just pick them up.

My tummy has been bothering me I should try some of these. I have been avoiding gluten free stuff because it’s so nasty but these look pretty good. I get hurting bad enough I might have to test them out to see if I eliminate gluten it will help. Thanks for sharing.
